Spinach Meatballs

Total time: 20 min

Ingredients:

6 oz box fresh spinach, diced
1/2 lb. ground beef
1/2 lb. ground turkey
1 cup bread crumbs
1 egg
2 garlic cloves
1 Tsp italian seasoning
2 Tbsp olive oil

Directions:

1. In a mixing bowl, combine the meat, spinach, bread crumbs, egg, garlic cloves and italian seasoning. Form into 1 inch meatballs.

2. In a large skillet, add the olive oil and brown the meatballs on all sides. Once browned, set them aside on a plate with a paper towel on it and drain any excess grease.

Tip:  If you double the recipe above you can make 2 dinners at once.  The first night you can eat meatballs with spaghetti and the next night you can eat meatball subs.
